Lazy Man’s Recipe for Gourmet Sweet Pickles

My grandfather always made these sweet pickles when I was a kid. I never really liked a sweet pickle, being raised on very stout southern vinegar garlic pickles (this will be another post!). But this particular sweet pickle I really enjoy. I can easily eat a whole jar! It is a very unique pickle, very sweet and slightly tangy. And it is very easy to make. The recipe is my grandfathers (my father’s father) and he acquired it from a family friend, Hale. Here is the recipe, enjoy!

1 large jar Polish or Kosher dill pickles

1/4 cup vinegar

2 cups sugar

Discard juice, wash pickles to remove sand and grit, cut in 1/4 or 1/2 inch slices. Mix together vinegar and sugar, it will be almost a paste. Layer pickle slices and sugar and vinegar, replace top.  Each day for four days invert the jar. They should be ready to eat on the fourth day.
